La Torcaza Estate - Panama
This coffee comes from the Baru side of Volcan Baru and faces out toward the Pacific Ocean. The dormant volcano lies in the heart of Panama's coffee producing zone. The Janson family has owned the farm for nearly one hundred years but has been growing coffee for only fifteen years. Their concept was to make the commitment from the first plantings to produce the best coffee they possibly could with the best methods available either from the realm of the time-tested and traditional or drawing upon the most up to date growing and processing technology.
The
result is a farm and a mill that
are second to none both in their
appearance and maintenance and
in the coffee produced there.
Because the land at La Torcaza
Estate is nearly all level and
at the same elevation the coffee
is incredibly focused and intense
and has a purity of aroma and
flavor that is unique. There
is a bright lemon note and a
hint of butterscotch and cognac.
The test, though, of a truly
great coffee is to let it cool
down and check to see if it tastes
the same or begins to show its
faults. La Torcaza Estate, however,
passes this test with flying
colors, as it cools, the flavor
and aroma, while more subdued
at a lower temperature, hardly
change at all. La Torcaza Estate
is truly one of the world’s
greatest coffees.
This coffee can be used for drip, french press or as a single-origin espresso.
